1. In a bowl, mix together the flour and salt. Make a well in
the center of the flour and add the tablespoon of olive oil and
the egg yolks. Start adding the water and mixing. When all the
water has been added, the batter should be like a thick pancake
batter; if needed, add more water. Add grappa, set aside to rest
for 1 hour.
2. Peel and core the apples, then slice them into 1/4-inch circles.
Place the slices in a bowl and squese the juice of the lemon over
them and toss to coat. Mix the 1/2 cup sugar and the cinnamon
together.
3. When the batter has rested for an hour, heat the oil in a
saucepan to 375° F.
4. Dip the apple slices in the batter and fry in preheated hot
oil until golden brown on both sides, 2-3 minutes. Drain on paper
towels and sprinkle with cinnamon-sugar.
