PATATE ARROSTE ROSMARINO
Rosemary Roasted Potatoes
Serves 6 to 8
Ingredients
- 3 pounds (1.4 kg) yellow Finn or Yukon gold potatoes,
cut into six wedges each
- 2 tablespoons olive oil
- Salt and freshly ground black pepper to taste
- 1 large yellow onion, julienned
- 2 tablespoons coarsely chopped rosemary
Method
Preheat the oven to 450°F (230° C) and place a cookie sheet
in the oven for 10 minutes.
Toss all of the ingredients together in a large bowl and
set aside.
Once the pan is hot, pull out of the oven and put the potatoes
and onions on the pan. Cook for 20 minutes. Shake the pan
and cook another 10 minutes. Make sure the potatoes are lightly
browned.
